I was skeptical at first about raw zucchini, But Wow!! what a pleasant surprise, And with this sauce, makes it so moreish you will go back for seconds, if you can fit it :) Found this recipe on the inter webs
Ingredients
2-4 Zucchini
1 cup Cashews
juice of 1/2 Lemon
2 cloves Garlic
6-7 Basil leaves
1/2 cup Water
Himalayan Salt and Pepper to taste
Makes enough for 4 people
Instructions
Using a spiral slicer or peeler slice up Zucchinis set aside, Add Cashews, Water, Garlic, Lemon juice to a blender and blend till smooth add basil at the end and blend a little more, To serve, Pour over Zucchini pasta. Enjoy!! =)
